Cookie Corner and cold desserts

Since it has been so hot I thought I would revamp cookie corner and have some cold desserts.
please add any kinky ideas like ginger pops etc.

INGREDIENTS for Ginger Cookies

2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3/4 cup margarine, softened
1 cup white sugar
1 egg
1 tablespoon water
1/4 cup molasses
2 tablespoons white sugar

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

Ok! Finally!

Recipe for rice krispie squares with peanut butter and chocolate top

1 recipe rice krispie squares as on rice krispies box just doube the vanilla!!
press into a cling film lined 9x13 pan

spread with peanut butter, thick as you like it (smooth or crunchy)

then top with chocolate ganache!

4 oz chopped semi-sweet chocolate 9 or semi sweet choco chips
4 oz heavy cream ( this is no time to use that diet stuff!!!!!!)
Heat cream in microwave to boiling point ( dont let it boil over or you need to add more cream(this IS rocket science, so pay attention!!)
When cream is hot, stir in chopped chocolate and continue to stir till all is smooth......quickly spread over peanut butter in pan..NO!!! you are not supposed to eat those squares till after you top them with chocolate!!....it will be ready soon enough......sheesh!

Let cool so chocolate sets.............Now you may cut it into squares! Don't be sooooo darn greedy, share with your friends!

Chocolate Rum Cookies

Slightly bitter and very addictive! Takes a bit of chillin' time.

1-1/4 c. Flour
1-1/2 tsp. Baking Powder
1/2 tsp. salt
1/2 c. ground hazelnuts
12 oz. bittersweet chocolate
1/4 c. butter
1/4 c. dark rum
2 large eggs
1/4 c. icing sugar (for sprinkling)

In a bowl- mix flour, baking powder, salt and hazelnuts together.
In a double-boiler with barely simmering water, melt chocolate and butter, stirring occasionally.
Stir in rum and cool.
Whisk in eggs and stir in flour mixture.
Cover and chill dough about 1 hour, or until firm enough to handle.

Halve dough and form into two 10" logs on waxed paper and chill 4 hours, or until firm.

Preheat oven to 350*F.
Spray 2 baking sheets.
Cut logs into 1/2" rounds and arrange about 1" apart on baking sheets.
Bake cookies in batches for 8 minutes and transfer to rack.
Cookies should be thick and cake-like.
Cool cookies completely and sprinkle with icing sugar.
Makes about3 dozen cookies.
